Kid Pleasin' Muffins

I'm always on the lookout for ways to use over-ripe bananas. We eat a lot of bananas in this house, so inevitably, we get a few brown ones from time to time. I like to sneak them into pancakes, or use them in smoothies, but the recipe I'm going to share today is a huge hit with my little guys.
Banana -Chocolate Chip Muffins

- 1 3/4 cups all-purpose flour
- 1/4 cup sugar
- 2 1/2 tsp. baking powder
- 3/4 tsp. salt
- 1 egg
- 1/2 cup milk
- 1/3 cup vegetable oil
- 1/2 cup mashed ripe banana
- 1/2 cup unsweetened applesauce
- 1 cup miniature semisweet chocolate chips

In a large bowl, combine the flour, sugar, baking powder and salt. Combine the egg, milk, oil, banana, and applesauce in a separate bowl. Stir this into the dry ingredients until just moistened. Fold in the chocolate chips. Fill greased standard-size muffin tins two-thirds full. Bake at 400 degrees for 20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from tin to a wire rack.

* This recipe will make one dozen regular size muffins, and one dozen mini-muffins. Griffie is partial to the mini-muffins.

Can't wait to give these a try. How is Griffin doing these days? Hope he is feeling much better. Camden is getting that "ready-for-school" look as I call it-growing up fast!

Thanks for asking, Cheryl...he's still not any better, so his doctor is consulting with a specialist. Hopefully we will have some answers soon...

The recipe sounds delicious, Heather. It was years before I realized you can freeze over-ripe bananas to use later in various recipes. I freeze them whole, then thaw and mash them for banana nut bread, my daily smoothie, etc.

Leah and I made Bakery-Style Banana Muffins this past weekend - it was a recipe you gave me many years ago. They came out pretty good - especially tasty fresh out of the oven. I think they'd be an even bigger hit if I added chocolate chips. We'll have to try out this recipe.

I remember those muffins, Jennifer! They were very banana-y, if memory serves. Personally, I think chocolate chips make everything taste better! Yum!

Linda I would love that recipe. It's funny you mentioned it, because I was sitting here earlier today thinking, "Hmmm...these muffins would be great with peanut butter chips!"

I made these muffins today, and the girls love them! I think they're pretty good too, and I noticed Rob snuck a few out with him. ;) That recipe is a hit!

Yay! I'm glad you tried them, Melissa! They are not super-sweet, which I like, and not a whole lot of sugar or oil in them. Whenever I make them, my boys want them for breakfast, snack, dessert, etc. Thanks for trying the recipe!
