A Little Break
I turned 37 years old this week. My favorite numbers are 3 and 7, so I have a feeling this is going to be a lovely year. My husband took it upon himself to take the day off on Tuesday, so that I could enjoy a day off. He did the school shuttling, diaper-changing, peace-keeping, meal preparation, and everything else I normally do. It was heavenly. After dropping Camden off at school in the morning, he came home and informed me that I would be going to the local spa for an hour-long massage in the afternoon. It was great, and I have decided that if I ever win the lottery, I am running out to hire my own personal massage therapist. When I returned home, Steve was preparing dinner - - pork chops stuffed with shallots, feta, mushrooms, and rosemary - - they were delicious. He even made me a key lime pie (from scratch, no less). It was a really, really wonderful day. The piece de resistance came late in the evening, when Steve came to me and said, "I can see why you are frequently at the end of your rope, by the time I get home from work at night!" Everyone needs a little validation every now and then, don't they?
I made the executive decision to keep Camden home from school today, as he's been fighting a cold all week and just seems a little, well, puny this morning. He's not running a fever, but is just not himself, so I think a day of pajama-wearing is in order. Unfortunately, we will have to miss out on Music & Movement, as well as a brand new play group we are joining, but I'm pretty sure the other mothers involved do not want a snuffly 5-year-old coughing all over their children. There is always next week!
I've found myself in a bit of a funk over this article, which appeared in the Idaho Statesman yesterday morning. The information in the article is nothing I didn't already know, but for some reason, seeing it in print gets my stomach all in knots. Granted, it is not a sure thing at this point, but, as I told Steve, I've been living in denial about the possibility of another deployment. The last deployment was a bit different - - Camden was only a year old at the time it started, and now, he cannot remember it even happening. With this deployment, the boys will be 7 and 4, and it will be much different - - for them, and for Steve.
My little boys and I are gearing up for a long month - - Steve is gone for four of the next five weekends, so we are going to be missing Daddy. We will be keeping busy though, so hopefully the time will fly!

Meet Terri
Terri came into my life at a time when I had a new baby, hadn't quite adjusted to being a full-time, stay-at-home mother, and frankly, was feeling pretty blue. I like to think of it as divine intervention of some sort! Terri is always there for me, even though she is a busy, homeschooling mother of 3 boys, not to mention, an avid gardener, farmer (she raises goats and cows), and devoted wife to her beloved Stevan. She is wise beyond her years (I could almost be her mother, if you must know...I said almost) and has a heart as big as they come. I feel so very lucky to call her my friend.

The best part was when I relayed the story to Steve, and he said, "A stop sign is a hexagon, though." Then I reminded Steve that a stop sign is 8-sided, therefore it is in fact, an octagon. Clearly, the children get their brains from their mother.

The Binky Fairy
So I mentioned to Griffin a couple of days ago that the "Binky Fairy" would be visiting our home soon. I explained to him that he is a big boy now, and that a new baby will need his binkies, so it is time to get rid of them. Camden was way more addicted to his Binky than Griffin is, and this little scenario worked like a charm with Camden. I think he asked for his Binky (which he called "Big Red", by the way) once, and then moved on with his life. Alas, Griffin is not his brother. I don't know how many times over the past 48 hours the poor boy has asked, in his teeny-tiny little voice, "Mummy, is the Binky Lady coming to take my Binky today?" or, "Where are my Binkies? Can I have them?" I finally broke down today and reassured him that his beloved binkies were not going anywhere right now, and that he could chill. I think I will just have to resort to a stealth, unannounced, middle-of-the-night disposal of all binkies. The kid has them hidden all over the house though, so it may take a few months.

Happy New Year!
I'm in a bit of denial that it is now 2009 ~ I'm still trying to figure out how 2008 sped by so quickly. I spent some time today, like a lot of people, thinking about the past year, and then I spend some time thinking about the past few years. I don't generally make New Year's resolutions, and I'm not necessarily making any this year. I am, however, going to try really hard to live my life differently. Okay, so I suppose that is a resolution of sorts. My thoughts are simple - - I plan to start putting some of the same effort toward caring for myself, in the manner that I care for my husband and children every day. I'm going to make an effort to explore my own interests. I'm going to try not to expect so much from myself. As far as self-care goes, the past couple of years have shown me that I am not getting any younger. I see it in the mirror, I feel it in my body, and I don't like it! Much to do. I'm looking forward to a happy, challenging, & healthful 2009, and I wish the same for you.

Friday Babble
I seem to have two little boys who are each dealing with some separation anxiety, and I must admit, I'm tuckered out! Griffin is knee-deep in a typical 2-year-old deal where he wants me in his line of sight at ALL TIMES, doesn't really want anyone else to try to hold him, etc. He doesn't want to nap, doesn't want to get in bed at night, and if he does, then he gets up a zillion times while I try to remain patient and get him back to bed. Last night I was thinking to myself, "What is up with this child?" when I suddenly remembered that Camden actually did this until he was 2 1/2. He woke 1-2 times per night, every night. Steve was gone for 1.5 of those years, I was working full time, and had nobody but myself, so I just powered on through and didn't really think about it. He didn't start sleeping through the night until Steve came back from deployment. At least this just seems to be a recent development for Griffin (the not napping/fighting bedtime part), so I suppose it could be worse! As for Camden - - he is also struggling a bit. Not wanting to go to school in the morning, not wanting to leave me...very unlike him. It kills me to see him feeling like this, so I hope that we will be able to work through whatever is bothering him very soon. After some consultation with my mother, and my dear friend Lisa, I am feeling better about the situation. It is so great to be able to pick up the phone and call my mother whenever I need some mothering advice, or any other time for that matter. We talk on the phone a lot, don't we, Mum? I am her own personal phone stalker, I think.
In baking news, I've been cranking out the biscotti all week. I love biscotti because, 1) It is delicious, 2) It is so easy to make 3) It freezes really well and is so easy to pop out of the freezer when you suddenly need snacks to hand out. I made cinnamon hazelnut biscotti, which turned out perfectly. I also made orange chocolate chip pistachio biscotti, but it came out really "fat", and isn't as crunchy as it should be. Oh well, what can you do. Later today, I will be making these cookies, and I hope they come out as good as they look in the picture. I also have two huge batches of granola mixed up and ready to bake...don't you just love Christmas baking?
I'm still trying to get use to writing down every single morsel of food that enters my body. Kind of makes eating a bit of a chore, and sucks any enjoyment out of it. However, I'm determined to do what I need to do to start feeling better.
I cannot believe it is almost Christmas! I'm nearly ready...just a few more things to make, packages to mail, and stamps to buy. Steve's folks arrive next Friday, which will be nice! We've only yet had a dusting of snow, but it sounds as though we could possibly get some more over the weekend...I would love that!
Oh! I almost forgot...Steve casually mentioned on the phone earlier today that he has some upcoming travel (albeit, not set in stone...yet) to Hawaii, Florida, and Las Vegas. Stinker. Granted, he'll be working while in those locations, but STILL!

Grammy Dunphy's Cream Puffs
Grammy Dunphy's Cream Puffs
1 cup boiling water
1/2 cup butter
1 cup sifted flour
3 eggs
Let water and butter come to a boil in a saucepan. Stir in one cup of sifted flour. Remove from heat, place mixture in a mixing bowl, and let cool. Next, add eggs, one at a time, mixing on low speed with an electric mixer after each addition, only until combined. Be careful not to over mix, or you may end up with pancakes instead of puffs! Drop by spoonfuls onto an ungreased cookie sheet (I usually get 10-12 puffs) and bake at 450 degrees for 15 minutes, then reduce oven temperature to 325 degrees, and bake for an additional 20 minutes.
To serve, cut puff open with knife and fill with ice cream, then top with hot chocolate sauce. Yum!

Nana Rolls
Perfect Dinner Rolls (a.k.a., Nana Rolls)
1 tablespoon active dry yeast
2 1/4 cups warm water (110 to 115 degrees)
1/3 cup sugar
1/3 cup shortening
1/4 cup non-dairy powdered creamer (you can also use dry milk powder)
2 1/4 tsp. salt
6-7 cups bread flour
In a large bowl, dissolve yeast in warm water. Add the sugar, shortening, creamer, salt, and 5 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky). Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with cooking spray, turning once to coat the top. Cover and let rise in a warm place until doubled, about 1 hour.
Punch dough down. Turn onto a lightly floured surface; divide into 24 pieces. Shape each into a roll. Place 2 inches apart on baking sheets coated with cooking spray. Cover and let rise until doubled, about 30 minutes.
Bake at 350 degrees for 12-15 minutes or until lightly browned. Remove from pans to wire racks.

Muffin Tin Monday: Christmas Stories
Snowman-shaped slice of wheat bread, coal for snowman's eyes/mouth (black beans), snowman arms (pretzel sticks), snow (mini-marshmallows), noses (carrot sticks), the ever-present Ranch dip, and "ice cold hot chocolate" (chocolate milk), just like in the story. The boys seemed to really like this one, and I had fun making it for them.

Something's Missing
After my parents have been here, it always takes me a few days to come out of the funk I find myself in after they go home. I'll give myself through the weekend, and then I'll need to pull myself together! Steve is out of town next week, and I will be very busy with the boys and with the library. I'm hoping to wrap up all of my loose Christmas ends over the weekend, so that I can start shipping boxes out to the east coast. Can you believe Christmas is only 3 weeks away? Crazy.
